2 Fantastic Natural Sheep Milk Cheeses made with the utmost care and craftsmanship – (Semi hard, white-ish cheeses). Buttery, creamy flavor but nice harder texture. Two of my personal favorites of all the cheeses we ship.
Seasonal production from grazing ewes.
• No production hormones.
• The nutrition of sheep milk is superior to cow milk in protein, calcium and “good” fats.
• No preservatives are used in the cheese. Ingredients are: Milk, culture, rennet, salt.
Our sheepmilk is produced with meticulous attention to cleanliness, as well as with respect for the environment and the well-being of our animals and natural and sustainable farms leading to production of the highest quality cheese available.
Member farms milk between 100 to 400 sheep seasonally, between February and September. During the spring and summer, the ewes, of the East Friesian or Lacaune breeds, have access to the greenest pastures available. Twice a day, the flocks return to the barns for milking. The milk is collected very gently, while the ewes are eating natural grains, and cooled quickly. The milk is picked up from the farms and used to produce our cheese.
The incredibly rich, flavorful milk produced by our members is the start for what many consider to be the finest cheeses in the world. Sheep milk for our cheese is shipped fresh from our farms.
Sheep Feta
Sheep milk for our cheese is shipped fresh, throughout the year, from our farms to a world renowned plant in central Wisconsin . There, cheese makers make our Feta by hand, using traditional methods.
After gentle pasteurization, culture and rennet are added to form curd. The cheese is not cooked or pressed but is cured briefly in a brine solution that adds a salty flavor to the sweet taste of the sheep milk. The name “Feta” means “slice” or “wedge” and comes from the way the cheese is cut into blocks before being placed in the salt brine.
We believe our feta is comparable in quality to the finest imported sheep milk feta available. The freshness and uncommon taste derive from the sheep, forages and cheese making tradition of Wisconsin .
After gentle pasteurization, culture and rennet are added to form curd and the cheese is pressed into wheels that are approximately ten pounds each. Each wheel is then cured, with meticulous attention to humidity and temperature. All wheels are covered with an innovative edible poly coating and further cave aged for at least six months.
We believe our cheese is comparable in quality to the finest imported sheep milk cheeses available yet they are unique cheeses, owing their uncommon taste to the sheep, forages and cheese making tradition of Wisconsin .
Award Winning Blue Cheeses
Traditionally, I was not a big fan of Blue Cheeses, but these are amazing. They are less strong and tangy and more mild and melt in your mouth kind of cheeses. Hard not to like.
Signature Blue Cheese. Great blue cheeses from Germany such as Cambozola and Montagnolo. While similar to those cheeses, we do put our own special touch into it that will surely entice you into another bite. This is the ultimate table cheese that will go well with any wine.
Danish Style Blue Cheese. A whole milk blue cheese with deep blue veins, it has a firmer texture that provides a mouth feel like those great Danish style blues. This cheese will crumble well on salads and in dressings. Sharp to the taste with a clean white color, this cheese will work well for any application.
Italian Style Blue Cheese. A whole milk blue cheese with green veins, this cheese brings back memories from Italy. With a slightly creamier cheese with an off-white color, this cheese was meant for those consumers who love Gorgonzola. It can be shredded on salads or better yet, slice it for crackers at a dinner party. This cheese works well with a stout red wine.
Aged version of our signature blue. This cheese is for those who are willing to wait for the best! Melt in your mouth texture with hints of earthy mushroom flavor, this is definitely not your average blue cheese! This cheese is for individuals with a preferred taste for something special.
Organic Blue Cheese From the Northwoods of Wisconsin uniquely flavored veined cheese that is crafted by the Artisan Cheesemakers. Made from Wisconsin Certified Organic Milk. It brings out the best of what organic stands for. This is no ordinary Organic Blue Cheese. One taste will reveal a flavor and texture like no other in the world.
Goat’s Milk Cheese
We ship a really great goat milk cheese and goat milk curd (one of the only providers in the country) and goat milk feta once in a while. We’ve also shipped different varieties of goat milk cheeses like vegetable, etc.
Cow’s Milk Cheese
We also shipped different very hard to get/find cheeses that are typically only sold at farmers markets but are really great cheeses. Some of these have also been my favorites.
We procure our cheeses from all over Wisconsin. I travel around to find new one’s all the time.
We have a string cheese that is salty and stringy, not made from mozzarella like most stores sell.
We also ship some of the masters and the more prominent cheese makers, but pick the best or most interesting cheeses from their selections. Like from Carr Valley or Widmer’s.
There are so many good ones that we select from, but this gives you a good idea of some of the types.
